The Princes of Asturias’ wedding cake, measuring two meters high, consisted of a base of almond sponge under several colorful layers – a passion fruit crème, raspberry sauce and rice pudding mousse – symbolising the Spanish national flag. Topping the sweet creation, a combination of symbols representing everything from the city where the nuptials took place – Madrid – to the number of children the prince and princess might have (the Prince mentioned he wishes to have between two to five children). Among the decorations completing the cake is the Prince of Asturias’ coat of arms, the shield of the royal house, two wedding rings and a pair of blooms representing the bride and groom. Finishing off the array of symbols are four smaller flowers. The cake was a creation Paco Torreblanca, a republican, who still felt honored to do this.
A son of the confectioner, Francisco Torreblanca, would later reveal that the couple tried 30 desserts with different chocolates, vanillas, almonds, liquors…to choose the perfect combination for their wedding cake. Prince Felipe loved everything he tasted so it was Doña Letizia the one who ended up choosing her favorite desserts taking into account the potential preferences of the guests. Her choice was a chocolate and almond mousse inside an almond and olive oil cake wrapped into chocolate and filled with fruits.
